As far as I know, the Projectivy Launcher is a third-party app that you or someone else will have installed. It’s certainly not installed by default on my OLED804. And you’ve turned this off now, haven’t you?
I don’t mean this in a mean-spirited way, but it’s a good example of why I always recommend performing a factory reset (preferably beforehand) for a firmware update as major as switching to ATV 11 and then testing the new operating system with the (newly configured) factory settings and without third-party devices or apps. A factory reset (with a completely new setup) deletes all third-party apps, which may then no longer be compatible or must be reinstalled.
Many people don’t seem to want to do this (or don’t know) and then run into problems.

As far as the accessibility settings are concerned, I don’t use them. I haven’t tried it now, but I don’t think that audio enhancers or subtitles, which are helpful for some users, affect the remote control.
